Harvesting is carried out by hand and spontaneous alcoholic fermentation takes place in temperature-controlled stainless steel tanks. Afterwards,\u003cstrong\u003e refermentation takes place following the ancestral method\u003c\/strong\u003e, bottling the must with still some residual sugars to be transformed.
