During the winter, late pruning is done so that the plants can come back to life slowly and be protected from sudden frosts. In summer, on the other hand, the foliage is aerated so that the grapes can be better exposed and then \u003cstrong\u003ethe grapes are harvested manually\u003c\/strong\u003e. In the cellar, alcoholic fermentation takes place in steel with a second fermentation in the bottle according to the Champenoise Method.
